Jicama Red Pepper Lemon salad

This makes a really refreshing summer salad & is quick to put together:

julienned jicama
julienned red, yellow or orange bell pepper
diced small radish (mixed colors or just red or white)
lemon - peeled, deseeded & chopped small dice
cilantro
roasted ground cumin
sliced green chilli
salt & lemon juice

Toss all of the above, taste & serve. It stays fresh for upto a day or two but the chopped lemon could go bitter
