Sauteed Radicchio & Mango, Indian Style

I concocted this on a whim, just 'coz i had the ingredients lying around :) came out really delicious & is so simple to make so sharing...the slightly bitter radicchio is complemented really well with the sweetness of the mango & the crunchiness of the seeds from the tempering adds great texture:

1 medium radicchio, sliced
1 large ripe mango, cut into large chunks
1 inch piece of ginger, sliced thin
1 green chilli, sliced
1 bunch spring onions (scallions), chopped fine

heat approx 1 Tbsp olive oil in a wok. add 1 tsp mustard seeds, 1/2 tsp fenugreek seeds & a pinch of asafoetida. when the mustard seeds start popping, add the ginger & chilli. when lightly browned, add the radicchio. as soon as it wilts, add the spring onions. mix well & turn the heat off immediately. its important to make sure you don't overcook the radicchio. add the chopped mango & salt to taste. serve immediately.
